That reminds me. I wondered recently if it would be possible to make bunny bacon. At the very least I would think that bunny jerky would be possible (and probably pretty tasty).

One of the local butchers sells rabbit in the town market. I kind of wonder what it tastes like, but also kind of freaks me out.
