Mmmmm. Crazy wild pig

Soooo, I've got a couple of wild boar chops stewing in the oven right now. Because of the Chinese New Year, I've been fixing pork for dinner (yummy yummy pork tenderloin rubbed in Northwoods Fire, seared and then steamed w/ a can of PBR for last night).

I browned the chops then poured in some beef stock, a can of PBR (sensing a theme), a little garlic and some grainy mustard. Simmered the sauce for about 15 minutes, and then poured the mixture over the chops and put the whole thing in the oven at 300° F for 45 minutes.

I'm already salivating.

It's a pig pickin in the Carolinas (apparently). I would call it a pig roast. The big issue is finding somewhere that will let you dig a 3'x6'x2' hole in the ground, burn a bonfire on Friday evening, stay up all night to make sure the thing doesn't catch on fire, and then have everyone you know show up and drink themselves senseless in the middle of the day.

it's kalua pig in hawaii. my friends do this at their house in Sacramento when they have a big party. (Father is Hawaiian). I think the pit's called an emu (or something) (not hawaiian and have never been to hawaii)

slow roasted pig...mmmmmmm


Ooo that reminds me I'm pretty sure I'm off to Memphis in May for some yummy BBQ and GRACELAND! two of my fave things! :D

And no, Mr_J, those little bastards get nothing. Pig is so close to human I'm afraid they'd get the taste for human flesh and take more chunks out of me than they currently do.

Naw, nothing but love. However, pets, much like children, should be closely monitored for murderous intent.
